Cost Controller

About the role

Raffles Seychelles is seeking a Cost Controller to support its Food & Beverage outlets. The role focuses on analysing and auditing cost factors to improve margins and ensure accurate financial reporting.

Key responsibilities

• Produce monthly F&B cost control reports comparing actual costs to budget and highlighting action points.
• Reconcile F&B costs for the Financial Controller and conduct monthly physical inventories of beverage areas.
• Generate detailed inventory results, including adjustments for rebates, cocktail sales, wine by the glass, recycled beverages and food transfers.
• Assist the Accounts department with goods receiving inquiries and invoice processing.
• Prepare monthly menu analyses based on recipe costings and daily flash food cost reports for the Executive Chef.
• Introduce and monitor par stock levels across all beverage outlets and ensure POS/PMS data reflects accurate revenue potentials.
• Provide pricing suggestions to the Director of F&B and maintain product setups in POS/PMS.
• Liaise with the central purchasing department on supply and pricing issues.
• Attend monthly F&B meetings, ensure compliance with health and safety legislation, and manage payroll and staffing requirements.
• Conduct monthly appraisals and disciplinary reviews for cost control staff.

Required profile

• Demonstrated experience in cost control and inventory management within a Food & Beverage environment.
• Strong analytical skills with the ability to produce accurate financial reports.
• Excellent attention to detail and ability to work collaboratively with finance, purchasing and operations teams.
