Assistant Head Sommelier

About the role

Constance Ephelia, a luxury resort on Mahé in the Seychelles, is looking for an experienced and passionate Assistant Head Sommelier to join its food and beverage team. Working closely with the Head Sommelier, you will help deliver an exceptional wine experience for discerning guests while supporting the overall wine programme.

Key responsibilities

• Assist the Head Sommelier in managing the resort’s extensive wine programme, including inventory control and cellar management.
• Collaborate to curate and update wine lists for multiple restaurants within the resort.
• Provide expert wine recommendations and food‑pairing suggestions to guests.
• Conduct wine tastings and educational sessions for both guests and staff.
• Train and mentor junior sommeliers and wine service staff.
• Maintain relationships with wine suppliers and negotiate purchases.
• Ensure proper storage and handling of all wines to maintain quality.
• Participate in budget planning and cost‑control measures for the wine programme.
• Stay informed about current wine trends and emerging wine regions.
• Assist in organising wine‑focused events and promotions.

Required profile

• Advanced certification from a recognised wine education body (e.g., WSET, Court of Master Sommeliers).
• Minimum 3‑5 years experience as a sommelier in a luxury hotel or fine‑dining restaurant.
• Extensive knowledge of wine regions, varietals and winemaking processes.
• Excellent palate and tasting abilities.
• Strong communication and interpersonal skills.
• Proven experience in staff training and mentoring.
• Proficiency in inventory management and wine‑list curation.
• Understanding of spirits, cocktails and other beverages.
