Commis – Kitchen Assistant

About the role

The Commis supports the culinary team at Raffles Seychelles by preparing high‑quality dishes and maintaining a clean, safe kitchen environment. Reporting to the Chef de Cuisine, the role is essential for delivering the brand’s renowned hospitality standards.

Key responsibilities

• Prepare and plate food according to menu specifications and quality standards.
• Maintain hygiene, sanitation, and safety procedures in all kitchen areas.
• Operate and clean kitchen equipment, including the use of a thermometer as part of the uniform.
• Control costs by monitoring portion sizes, minimizing waste, and conserving utilities.
• Assist with mise‑en‑place, stock taking, and refrigerator organization.
• Support colleagues during service and ensure a professional, friendly attitude toward guests.
• Adhere to all hotel policies, fire safety, and emergency procedures.

Required profile

• Physically fit and able to work in a fast‑paced kitchen environment.
• Fluent in spoken and written English; knowledge of additional languages is a plus.
• Team‑oriented with a strong work ethic and attention to detail.
