Chef de Cuisine – Fine Dining

About the role

Constance Ephelia, a luxury resort on Mahé, Seychelles, is looking for a visionary Chef de Cuisine to lead its fine‑dining restaurant. You will shape memorable culinary experiences for discerning guests while upholding the resort’s reputation for excellence.

Key responsibilities

• Develop and launch innovative menus that blend local and international flavours.
• Lead, inspire and mentor a team of culinary professionals, fostering creativity and high standards.
• Maintain consistent food quality, presentation and service across all dishes.
• Manage food costs, inventory and kitchen operations to maximise efficiency and profitability.
• Collaborate with the Food & Beverage team on special events, dietary requests and unique dining concepts.
• Ensure strict compliance with food safety, hygiene and sustainability practices.
• Oversee procurement of sustainable, high‑quality ingredients and maintain relationships with local suppliers.
• Represent the restaurant at culinary events, competitions and marketing photo shoots.

Required profile

• Culinary degree or diploma from a reputable institution.
• 3‑5 years of Michelin‑star or equivalent fine‑dining experience, including leadership roles.
• Deep knowledge of international cuisines and contemporary fine‑dining trends.
• Strong leadership, communication and team‑building abilities.
• Creative menu planning and a passion for delivering exceptional guest experiences.
