Executive Sous Chef – Fine Dining

About the role

Constance Ephelia, a luxury resort on Mahé, Seychelles, is looking for an Executive Sous Chef to support the Head Chef in delivering world‑class fine‑dining experiences. You will lead a talented brigade, develop innovative menus, and uphold the highest standards of culinary excellence.

Key responsibilities

• Oversee daily kitchen operations, ensuring compliance with fine‑dining standards and food‑safety protocols.
• Develop and execute contemporary and classical menus that showcase French and international techniques.
• Lead, mentor, and appraise kitchen staff, fostering continuous professional development.
• Manage food costs, inventory, and supplier relationships to optimise efficiency.
• Collaborate with the Head Chef on strategic culinary direction and seasonal menu planning.
• Maintain rigorous hygiene, safety, and health‑regulation compliance.
• Train new team members and establish best culinary practices.
• Coordinate with front‑of‑house to ensure seamless service and guest satisfaction.

Required profile

• Minimum 5 years of experience in fine‑dining or Michelin‑starred kitchens in a similar senior role.
• Diploma or degree in Culinary Arts, Hospitality Management, or related field.
• Proven expertise in classical French cuisine and contemporary culinary techniques.
• Strong leadership experience managing large kitchen brigades.
• Advanced knowledge of food safety, hygiene standards, and regulatory compliance.
