Executive Sous Chef – Michelin-Star Kitchen

About the role

We are looking for an Executive Sous Chef to join the culinary team at Constance Ephelia, a luxury resort on Mahé, Seychelles. Working side‑by‑side with the Head Chef, you will help maintain Michelin‑star standards and deliver exceptional fine‑dining experiences for discerning guests.

Key responsibilities

• Oversee daily kitchen operations, ensuring compliance with Michelin‑star quality and food‑safety regulations.
• Develop and execute innovative menus that blend classical French techniques with contemporary culinary trends.
• Lead, mentor and appraise a large brigade, fostering continuous professional development.
• Manage food costs, inventory, and supplier relationships to optimise efficiency.
• Collaborate with the Head Chef on strategic culinary direction and seasonal menu planning.
• Maintain impeccable presentation, consistency and hygiene standards for all dishes.
• Train new kitchen staff and establish best‑practice procedures.
• Coordinate with front‑of‑house teams to ensure seamless service and guest satisfaction.

Required profile

• Minimum 5 years experience in Michelin‑starred kitchens in a similar senior role.
• Diploma or degree in Culinary Arts or Hospitality Management.
• Proven expertise in classical French cuisine and modern culinary techniques.
• Strong leadership experience managing large kitchen brigades.
• Advanced knowledge of food safety, hygiene and regulatory compliance.
