Sous Chef Breakfast (Local Talent)

About the role

Six Senses Zil Pasyon is looking for a Sous Chef Breakfast (local talent) to support the Executive Chef and take responsibility for the efficient operation of the breakfast department. The role focuses on keeping the culinary experience fresh and aligned with the hotel's Eat With Six Senses approach.

Key responsibilities

• Support the Executive Chef and run the breakfast department efficiently.
• Keep menus and wine lists relevant and in line with Eat With Six Senses practices.
• Set up purchasing practices that meet the nutrition and sustainability requirements of the Six Senses platforms.
• Train and educate staff with a cost-focused philosophy.
• Operate the department in line with legal, statutory and financial requirements, reporting systems, contracts, security and safety protocols, product and service standards, host management practices and budget controls.
• Strictly follow LQA standards and respond to guest comments.

Required profile

• High school diploma or equivalent and at least 5 years of kitchen experience in a full-service outlet or similar setting.
• Hospitality diploma or degree from a recognised hospitality school is preferred.
• Fluent English; additional languages are preferred.
• Legal right to work in Seychelles at the time of application.

Required skills

• Knowledge of broiler equipment and meat and fish cookery.
• Proficient knife skills and understanding of the farm-to-table concept.
• Alcohol awareness certification and/or a valid food service permit or health/food handler card as required by local or state authorities.
