Sous Chef - Mediterranean Cuisine

About the role

Six Senses Zil Pasyon is looking for a Sous Chef specialising in Mediterranean cuisine. The role supports the Executive Chef and ensures the efficient operation of the kitchen, in line with the hotel's nutrition and sustainability principles.

Key responsibilities

• Support the Executive Chef and take responsibility for the efficient operation of the kitchen.
• Keep menus and wine lists fresh and aligned with Eat With Six Senses practices.
• Set up purchasing practices that meet the nutrition and sustainability requirements of the Six Senses platforms.
• Train staff in a cost-focused approach.
• Run the department in line with legal, financial, safety and security requirements, budget controls and product and service standards.
• Strictly follow LQA standards and respond to guest feedback.

Required profile

• High school diploma or equivalent and at least 5 years of kitchen experience in a full-service outlet or similar setting.
• Hospitality diploma or degree from a recognised hospitality school is preferred.
• Fluent English; additional languages are preferred.
• Alcohol awareness certification and/or a valid food handler card as required locally.

Required skills

• Use of broiler equipment and knowledge of meat and fish cookery.
• Proficient knife skills.
• Understanding of the farm-to-table concept.
