Assistant Sommelier

About the role

Constance Ephelia, a luxury resort on the island of Mahé in Seychelles, is looking for an Assistant Sommelier to join its culinary team. You will support the Head Sommelier in delivering exceptional wine and beverage service to guests, helping to create memorable dining experiences through expert wine knowledge, personalised recommendations and outstanding customer service.

Key responsibilities

• Assist in selecting, procuring and managing the wine and beverage inventory, keeping stock levels and rotation optimal
• Recommend wines to guests based on their preferences, food choices and budget
• Carry out precise food and wine pairings for the restaurant and private dining events
• Maintain records of tastings, guest preferences and sales data in the point of sale system
• Support the Head Sommelier in training front-of-house staff and run wine tastings and educational sessions for guests
• Work with the culinary team on seasonal wine lists and special beverage programmes
• Ensure compliance with health, safety and licensing regulations for beverage service
• Upsell premium wine selections to contribute to revenue growth

Required profile

• Proven experience as an Assistant Sommelier, sommelier or in a similar wine service role in fine dining or luxury hospitality
• Knowledge of wine regions, varietals, production methods and flavour profiles, plus food and wine pairing
• Excellent customer service and communication skills
• Fluent English; French, German or Mandarin is highly desirable
• WSET Level 2 or higher or Court of Master Sommeliers certification, and experience mentoring junior staff
