Sommelier

About the role

Constance Ephelia, a five-star resort on the island of Mahé in Seychelles, is looking for a passionate and knowledgeable Sommelier to join its food and beverage team. The Sommelier curates and presents an exceptional wine experience for guests, combining technical expertise with hospitality and teamwork.

Key responsibilities

• Provide expert wine recommendations and run engaging wine tastings, showing knowledge of varietals, regions and production processes
• Develop, maintain and curate a balanced wine list reflecting trends, emerging regions and the resort's culinary philosophy
• Deliver flawless wine service according to international protocols, with proper handling, storage and presentation
• Analyse guest preferences to suggest food and wine pairings
• Work with the culinary team to align wine selections with seasonal menus and special events
• Run wine seminars and training for guests and front-of-house staff
• Manage wine inventory, stock levels and records using POS systems and MS Office
• Negotiate with wine suppliers and organise wine events, promotions and tastings
• Stay informed on international wine markets and trends
• Work flexible shifts, including evenings, weekends and holidays

Required profile

• Extensive knowledge of wine regions, grape varietals and wine-making processes worldwide
• Advanced certification from a recognised body such as WSET or the Court of Master Sommeliers
• At least 3-5 years of experience as a Sommelier in a luxury hotel, fine dining restaurant or similar
• Refined palate and expert knowledge of food and wine pairing
• Experience training and mentoring junior staff
• Fluent in French/Russian and English, written and spoken
