Demi Chef de Partie - Fine Dining Kitchen

About the role

Constance Ephelia, a luxury resort on the island of Mahé in Seychelles, is looking for a Demi Chef de Partie to join its kitchen brigade. You will work alongside the culinary team to deliver fine dining experiences, maintain high standards of cuisine and contribute ideas to the evolving menus.

Key responsibilities

• Specialise in your assigned station, building expertise and efficiency while keeping meticulous attention to detail
• Prepare and cook food to fine dining standards, ensuring consistency in taste, presentation and quality
• Collaborate with the kitchen brigade and support senior chefs
• Execute classical and contemporary techniques with precision, including knife skills and food handling
• Maintain strict food safety and hygiene standards and follow health and safety protocols
• Assist in menu development and refinement, respecting the head chef's vision
• Manage mise en place and station organisation for smooth service
• Monitor food costs and minimise waste
• Support the induction and training of junior kitchen staff
• Work efficiently under pressure during service

Required profile

• Experience in award-winning or internationally recognised fine dining establishments
• Knowledge of international cuisines and familiarity with tropical or island cuisine
• Experience in menu development and food costing
• Supervisory or mentoring experience with junior kitchen staff
• Understanding of waste management and sustainability in professional kitchens
• Relevant food safety or culinary certifications

• Thorough understanding of food safety, hygiene regulations and HACCP principles
• Expertise in food preparation, plating and presentation to fine dining standards
• Strong knife skills and food handling
