About the role
The Waldorf Astoria Seychelles Platte Island is looking for a passionate Sous Chef specializing in Mexican cuisine to join its culinary team. You will support the Executive Chef in delivering authentic, high‑quality Mexican dishes that meet the resort’s luxury standards and delight guests.
Key responsibilities
- Assist the Executive Chef and Executive Sous Chef in daily kitchen operations.
- Lead the Mexican cuisine offering, ensuring authenticity, creativity, and consistency.
- Prepare and present dishes that align with Waldorf Astoria luxury standards.
- Develop seasonal menus, specials, and new concepts inspired by Mexican culinary traditions.
- Maintain strict adherence to recipes, portion controls, and presentation guidelines.
- Uphold high levels of cleanliness, organization, and food hygiene in the kitchen.
- Supervise, motivate, and train kitchen team members on Mexican cuisine techniques.
- Ensure compliance with Hilton standards, HACCP procedures, and food safety regulations.
- Support inventory management, stock rotation, waste control, and food cost targets.
- Interact with guests when appropriate and accommodate special dietary requests.
Required profile
- Proven experience in authentic Mexican cuisine and a strong culinary background.
- Leadership ability to manage and develop a kitchen team.
- Operational discipline and the capacity to thrive in a remote island luxury environment.
- Excellent communication skills to coordinate with service teams.
Required skills
- HACCP knowledge and implementation.
- Food safety compliance.
