Creative Sushi Chef – Luxury Resort

About the role

Garden Hill Resort & Spa is seeking an experienced Sushi Chef to lead the development of a distinctive sushi concept at its ocean-view Pool Bar & Restaurant in Seychelles. The role combines creative menu design, hands-on sushi preparation, and interaction with guests to make sushi a signature attraction.

Key responsibilities

• Develop a modern sushi concept and a focused menu of 12-16 high-selling dishes.
• Create signature rolls, nigiri, sashimi, aburi, tataki and sharing platters, with strong visual appeal for social media.
• Manage recipe cards, food costing, portion control, fish yield and waste.
• Maintain strict HACCP and raw-fish handling procedures.
• Organise the sushi station, train local kitchen staff and personally serve guests.
• Plan and execute Sushi Nights, tasting menus and special events.

Required profile

• Minimum 8 years professional sushi/Japanese kitchen experience.
• At least 2 years in a senior or section-leading role.
• Experience in a luxury resort, 5-star hotel or high-volume Japanese restaurant.
• Strong traditional Japanese techniques combined with contemporary presentation.
• Proven menu-development and food-costing skills.
• Excellent knowledge of raw-fish handling and HACCP.
• Good spoken English; international resort experience is a plus.
