Sushi Chef – Luxury Ocean‑View Resort

About the role

Garden Hill Resort & Spa, a luxury ocean‑view resort in Seychelles, is seeking an experienced Sushi Chef to lead the development of a distinctive sushi offering at its Pool Bar & Restaurant. The role combines creative menu design, hands‑on preparation, and guest interaction in a high‑visibility setting.

Key responsibilities

• Develop a modern sushi concept and a focused menu of 12–16 high‑selling dishes.
• Create signature rolls, nigiri, sashimi, aburi, tataki, and sharing platters.
• Produce visually impressive dishes for social media and live sushi presentations.
• Manage recipe cards, food costing, portion control, fish yield and waste.
• Maintain strict HACCP and raw‑fish handling procedures.
• Organise the sushi station, train local kitchen staff, and personally serve guests.
• Design and execute Sushi Nights, tasting menus and special events.

Required profile

• Minimum 8 years of professional sushi/Japanese kitchen experience.
• At least 2 years in a senior or section‑lead role.
• Experience in a luxury resort, 5‑star hotel or high‑volume Japanese restaurant.
• Strong traditional Japanese techniques combined with contemporary presentation.
• Proven menu‑development and food‑costing abilities.
• Excellent knowledge of raw‑fish handling and HACCP.
• Good spoken English; international resort experience is a plus.
